The refrigerated displays are available in different sizes and can be equipped with 1 or 2 doors and with all glass sides, from here comes the name panoramic displays. The panoramic refrigerated displays are having a great success especially in restaurants because they allow you to store meat in an optimal way and at the same time allow you to expose it to tempt the customer. However, for the meat to be tender it's necessary to undergo an "aging" process. The aging is a process that takes place after killing and freezing of the meat and it's necessary to make it more tender and tasty, the muscles are initially tight and rigid so to ensure that the meat can be consumed it's necessary to make time pass while the meat undergoes a "maturing" process and that is the acidity and the action of the enzymes of the microorganisms act on the protein obtaining and increase of softness and flavour.

The meat maturing process has three conditions:

  • Temperature
  • Humidity level
  • Ventilation

The piece of meat in fact must receive in every part the same temperature, the same level of humidity and the same degree of ventilation, in a sterilized environment and controlled by the development of bacteria, that is why a good meat display becomes essential in butcher shops but also in restaurants where meat dishes are served.
